Some days just align perfectly. You’ve got ideal weather, the right crew, trail conditions that cooperate, and a post-hike reservation waiting at exactly the right restaurant. May 5th was one of those days — and the fact that it landed on Cinco de Mayo? Honestly, fate.
A hike AND a margarita. There is no better way to celebrate Cinco de Mayo.
Three Falls Trail in Alpine, UT truly delivers. It strikes that perfect balance: enough elevation to feel like a real workout, but never punishing. The scenery does most of the heavy lifting, pulling you forward even when your legs start to protest. We stopped at each viewpoint to soak it in — because rushing past them would’ve been a crime — and still made great time.
Post-hike hunger is a different kind of hunger, and Sol Agave in American Fork was absolutely ready for it. We rolled in trail-dusty and ravenous, and they did not disappoint. Authentic Mexican flavors, generous portions, and — because the universe has a sense of occasion — a Cinco de Mayo vibe that turned dinner into a full-on celebration.
The margaritas hit differently after a day on the trail. That’s just science.
